From an early age, Peter was fascinated with the industry and dreamed of entertaining and sit down affairs. He had to leave Kingston and virtually hide from his friends because in those days, it was unheard of that anyone with a high school diploma would want to bus tables. He soon realized after his induction to Half Moon as a busboy what was in store for him. He had a plan, a plan that would take him to the top, not with University accreditations but the SCHOOL OF HARD KNOCKS. He went to Germany on a scholarship after 2 years at Half Moon as a busboy, cook and bartender and virtually did the same over there for almost 2 ½ years. The last 6 months of that time was spent in hotel school at Karl Duisberg Gesellchaft in Bad Wiesee, West Germany.
Peter worked for Trusthouse Fort (THF) from 1977 - 1988. The organization owns a variety of hotels and eating establishments in various locations of the world. This work took him to Pegasus Hotel In Kingston, Jamaica and later to Dubai International Hotel in the UAE where he was the Food & Beverage Director for two years.
Another position for Peter overseas was working with Gems of Barbados where he was operating director, managing 8 hotels. Other positions at home took him to Terra Nova Hotel in Kingston, Eaton Hall in Runaway Bay and Mallards in Ocho Rios.
Peter arrived at Royal Plantation Ocho Rios on December 1, 2003. He has this to say, "I am excited and energized by all the talented and dedicated people who work here, whose engaging disposition and wonderful personalities never fail to amaze me. They have developed over time, the art of diligent work ethics with a clearly defined goal. I am also thrilled by the many fabulous and interesting guests that Royal Plantation seems to attract – people from all over the world and from all age groups. Our return cocktails and dinner party for our return guests is an event I always look forward to. A typical day is really all about interacting with my team members or guests or sitting down with my creative team trying to develop another exciting authentic guest experience that RP is known for".
In discussing events at the hotel, Peter noted they have staged some very successful events for both resident and non-resident guests. The most popular was the end of month Sunday Brunch where children were even allowed on property, followed by their quarterly concert series in the elegant drawing room on their 105 year old Steinway grand piano.The next concert on Nov. 22nd will feature Brian Pezzone, internationally acclaimed concert pianist. Their Martini moments every Friday and cigar rolling demonstration has also attracted several local attendees, and loyal returnees enjoy these events, along with flower arranging, cooking demonstrations, and hot chocolate mornings. Another program is the Artist in Residence program, whereby one of the many talented local artists sets up a mini art school on the terrace and guests who has that interest can learn brush strokes, colour coordination and things of that nature.
Peter enjoys food, wine and company in dining. He delights in the perfect pairing of wines with foods, as he feels it enhances the taste and flavor of both. In fact, Peter has been a judge at local events on several occasions. In the early years, he judged at the annual Jamaica Independence island-wide food festival. He has also been involved with the H.E.A.R.T Academy vocational institute for the chefs program. He won the Chairman’s award at the Observer table talk culinary expose in 2004 and was a guest lecturer in food and beverage at the University of the West Indies in 2003 in the Hotel Management diploma course. All of that experience carries with him, along with that of the other members on the team. Additionally, at Royal Plantation, they use guest feedback and ideas from the team members for menu planning ideas. They try to incorporate things that are new and trendy, as well as traditional local and international favorites. Royal Plantation has earned many awards, such as American Academy of Hospitality Sciences (AAHS) 5 Star Diamond Award. Peter's thoughts about what it takes to earn such a reward go to offering guests an over the top experience that usually involves something rarely planned, from the heart & spontaneous. An example would be picking fresh fruit from one of the many fruit trees around the property and handing it to a guest to eat.
While Peter is almost always very busy, he maintains a sense of humor, he considers the hotel team to be very much like family. His attitude is very hands on, where he can use appreciation for the arts, attention to detail, bartender skills, math skills, and any number of things. In his mind, the word "NO" does not seriously exist, and he likes guests to talk to the team about their whims and fancies, as all of the team at Royal Plantation look forward to making them happen on a daily basis.
